A hydroelectric dam works by collecting water in a reservoir held back by the dam. The water then slowly gets let out through the penstocks at a steady pace. Because if the water were to be let out too fast then the water level would go down in the reservoir and you would be having trouble with drought, if too little is let out you would have to use the spillway tunnel to release the water which then can not be used to create electricity. The diagram should help you to understand.
Some of the water gets let through the intake towers at the top of the dam and travels through pipes towards the power house where the water rushes through turbines to charge the genrators up. You could categories this as a turbine but we thought it deserves its own page!
